The Process
Lentils are processed by InfraReady Products using a well-researched and defined infrared cooking process to generate a pre-cooked lentil powder. The infra-red cooking process, or micronization, is a dry heating process in which infrared energy is applied to the product on a vibrating bed. The technology has been employed by the food industry to increase food safety, shelf stability and nutritional value as well as decrease cooking times. In the case of NutraReadyTM, InfraReady inactivates endogenous enzymes which enhance the antioxidant activity of the polyphenolics contained within the lentil. The resultant product exhibits exceptional functionality when used as a meat binder and extender.
